Très utilisé dans l’industrie agro-alimentaire, le glutamate en quantité minime relève et ressort le goût du sucré et du salé .
On retrouve souvent cet additif alimentaire dans l’huile, dans le sel, dans les bouillons, les légumes, les hamburgers, le Coca-Cola, les boissons gazeuses, la sauce Soja, etc…. Il est également utilisé dans la boulangerie industrielle et les pâtisseries : les gâteaux, le pain, les biscuits, les vins, les plats cuisinés, produits allégés, et les produits laitiers dégraissés. Le glutamate renforce le goût des ingrédients contenus dans le produit, agirait comme un excitant sur les papilles gustatives et surtout sur le cerveau. Un fait que les patrons des grandes industries alimentaires ne semblent pas calculer, puisque faire des économies est peut être prioritaire pour eux. Ils utilisent moins les matières premières et abusent plutôt du dosage du glutamate dans leurs différentes préparations, sans pour autant altérer le goût initial du produit.
D’aucuns avoueront d’ailleurs à ce sujet : « Parce que son emploi est devenu une nécessité commerciale, car il permet de rendre les consommateurs dépendants des aliments qui en contiennent. Les consommateurs choisissent donc leurs produits plutôt que ceux des compliments et mangent ainsi d’avantage que si le glutamate n’avait pas été ajouté. » Ce faisant, la santé des consommateurs de ces produits alimentaires pourrait sérieusement être exposée à des dommages divers.
Au fil du temps, des signes majeurs d’empoisonnement possibles peuvent survenir et se manifestent par :-La perte de cheveux, des migraines, la prise de poids, la dépression, l’irritation des intestins, les crampes d’estomac, la diarrhée, les nausées, les douleurs musculaires, les douleurs articulaires, la fatigue extrême, la dépression, l’anxiété, les céphalées, la panique chez les enfants. Des peaux très sèches, le saignement de gencive, la gingivite, l’asthme, etc…
Encore appelé « Assaisonnement naturel», le glutamate, plutôt toxique, ne devrait pas être consommé abusivement. Dans ce cas, et puisqu’il ne semble pas exister officiellement et scientifiquement un traitement contre les inconvénients que pourrait avoir le glutamate, la responsabilité du consommateur, libre de ses choix de produits alimentaires devrait être engagée, afin de prévenir des désagréments sanitaires et surtout le pire qu’il puisse y avoir en matière de santé.
