[Chronique] Gastronomie : LE POULET-BICYCLETTE: DES ORIGINES DU SURNOM À UNE HISTOIRE DE « LOCAL » DANS NOTRE CUISINE.
J’ai envie de dire ou d’écrire: « Si les poules avaient des dents, les poulets eux aussi pourraient aller à bicyclette » (sourire) Mais il y a un MAIS!…C’est totalement impossible. Quel est le lien puisque dans les deux cas, ces faits n’arriveront jamais?! Où veux-je en venir avec cette citation? J’y viens.
Contrairement à l’appellation « Poulet-morgue » qui est triste, celle de poulet-bicyclette, aussi frais et appétissant qu’il puisse être à la dégustation, est plutôt sympathique voire amusant! « Poulet bicyclette », mais quel drôle de nom dis donc! (Sourire).
Encore une fois, cette interrogation: le poulet serait-il capable de pédaler une bicyclette? Comment s’y prendrait-il pour tenir les guidons lui qui n’a pas de mains? Parce que à bien y réfléchir, ce pseudonyme doit avoir des origines, une histoire! À moins que le monde soit à l’envers et que les Hommes marchent sur la tête!
Il ne s’agit pas d’un dérèglement de la normalité, Dieu merci! L’anecdote rapporte en effet que le poulet doit son fameux pseudonyme composé à sa démarche rapide et saccadée qualifiée pratiquement de « Démarche de coureur cycliste ». Plus sérieusement, il faut dire que le poulet-bicyclette aligné ou exposé sur une étagère au marché, mérite le coup d’œil puis le détour qui consiste à l’acheter, pour son naturel et ses conditions d’élevage car son alimentation n’est pas gavée d’intrants et sa croissance n’est ni accélérée ni artificielle. Au goût, le poulet-bicyclette deplumé, nettoyé et cuit, est réputé pour être plus frais et appétissant. Que veut le consommateur si ce n’est manger sain!
Encore appelé « Grand père des poulets du village » ou « poulet dur » au Burkina-Faso, « Poulet de brousse » en Côte-d’ivoire, poulet local ou poulet fermier dans plusieurs pays, le poulet-bicyclette connaît le même succès partout et beaucoup plus lorsqu’il est savamment cuisiné.
Qui peut résister à un plat bien présenté et coloré de poulet-bicyclette rôti, frit, fumé, grillé, bien assaisonné, profondément cuit, tendre et doré comme il se doit, accompagné selon les préférences, de riz, de frites, d’akassa, de bananes plantain, de attieke, de pâte rouge etc…? Pas grand monde semble-t-il! Pas moi en tout cas (Rires)!
Après avoir vanté les mérites du poulet-bicyclette au naturel, quoi de plus normal que de qualifier ce même poulet-bicyclette sous ses différentes présentations?! Ici la vérité que personne ne peut nier, c’est le goût succulent de cette volaille lorsqu’elle est préparée avec soin et art.
Il s’avère que préférer et acheter du poulet local pour ensuite le cuisiner à sa guise et en fin de compte, le manger n’est pas une mauvaise idée. Au contraire, c’est un choix judicieux pour la santé, le moral et le plaisir des papilles gustatives. Et à ce moment précis, qu’est-ce que ça importe peu que le poulet ne puisse pas aller à bicyclette! Le plus intéressant c’est qu’il finisse tout cuit, les pattes jointes, dans notre assiette (Rires).
